DDR4 RAM is not nearly as finicky as DDR3 was. Linus Tech Tips did a video demonstrating you can mix and match without issue. You should obviously try to get RAM with the same specs as your current kit though because the system will typically only be able to run at the speed/latency of the slowest stick.
I'm planning on using it with a Ryzen 5 5600X (or non-x if/when it comes out) and a 6800XT, but I know ram is less important the higher the resolution is and I'm planning on playing at 1440p and maybe 4k a bit, so is there a less expensive kit of 2x8 GBs of ram I should look at getting instead? 16 GB should be enough. Anything above 3000 mhz.

16GB is considered "minimum viable" for a modern gaming PC today. For the future, 32GB is unquestionably a good idea. Both my current main PCs have 32GB and I regularly make use of it. Kinda dated nowadays. DDR4 is so cheap now that it makes no sense to get 16gb unless tight budget.
Nope it can help with large seeds. Get 32gb, no extra need for 64gb unless you do 4k and 8k video editing, for ddr4 3600mhz or 4000mhz will be good, for ddr5 5600mhz or 6000mhz, if you are getting ryzen 5000 get 4000mhz ddr4, if your getting ryzen 7000 get 6000mhz ddr5. If you just wanna play games then 32gb might be the best option.
